Since the day we opened the deli in Clifton, 20 years ago we have been serving brownies to customers as takeaway or at events. They are still as popular as ever and we often get asked for the recipe. Papadeli brownies

Ingredients

150g  unsalted butter

180g  quality dark chocolate or couverture (you can buy in the deli if you need some good stuff!)

150g sugar

100g plain flour

1/2 tsp baking powder

3 eggs 

Line low sided baking tray (about 20 x 30cm), with baking parchment

How to make them

Grease or line a baking tray with parchment.

Pre heat the oven – gas mark 5/180c

Melt the chocolate and butter in a bowl over boiling water.  

Whisk the eggs and sugar until fluffy then add in the melted chocolate and butter.

Fold in the flow and baking powder.

Pour the mix into the tray and sprinkle white chocolate drops, raspberries or blackberries (can be frozen ones) then  bake for about 20 mins. Check and give it a shake side to side.  If the centre wobbles a bit, then it’s read – we like them nice and gooey!
