Ingredients you’ll need

This is a pretty easy tart to make, especially if you have ready made pastry.  It’s absolutely delicious and is always a hit in the deli. Tastes of Autumn!plum tart recipe

  • 500g ready-made shortcrust pastry or make your own
  • Zest and juice of two lemons
  • 4 tablespoons double cream
  • 100g ground almonds
  • 5 eggs
  • 100g unsalted melted butter
  • 8 tbsp amaretto liqueur (optional)
  • 6 plums, stones taken out and cut into slices
  • 200g golden caster sugar

 

How

Line a medium size tart tin with the pastry and chill

(25 cm diameter approx. and 3-4 cm deep loose bottom tin)

Preheat oven to 180c fan gas 4. Bake the pastry blind with greaseproof and baking beans for 15mins or until lightly golden. Remove the beans and paper.

Whisk the lemon zest and juice, cream, almonds, sugar, egg and butter (melted) until all smooth and creamy. Stire in the amaretto.

Pour the mixture into the case and arrange the plum slices into the mixture.

Put int the oven and bake for about 25 mins or until the mixture has just set.

Allow to cool a little – it’s at its best warm from the oven. Eat on its own or add vanilla ice cream or crème fraiche.
