Learn tips and techniques for making some delicious Middle Eastern inspired classics. A great repertoire to have under your belt to ring the changes when you’re stuck for what to make!
The teachers: Marcin Lawrentowicz is full time chef at Papadeli and is responsible for the delicious, imaginative creations you see in the counter as well as much of our event catering. He’s worked at some of Bristol’s best restaurants and before that Edinburgh (we are very lucky to have him!). Kirstie Amos is a superb event chef (and ex Papadeli chef) who can cook up an amazing feast in next to no time. She is full of excellent, creative ideas that you will love. Jade, our talented baker, who makes all the cakes you’ll find in the deli.
Simon MacDonnell, aka Papa, is co-founder of Papadeli and is still mad about good food 20 years later!
All chefs are brilliantly knowledgeable and super friendly, so you’ll have a lovely time watching and learning before getting stuck in with some fabulous ingredients. Classes are fun and informative.
Chefs rotate depending on how busy they are with catering, so expect to see any one (or a combination) of the above!
Our cookery school, on the top floor above our deli, is a professional kitchen where our chefs create all the delicious takeaway dishes in the deli counter and for catering events during the day – from takeaway dishes, frozen meals and amazing cakes. In the evening, it’s a beautiful and perfect space for learning how to make all these dishes and taste some new flavours. If you ask nicely, you might get a private tour of the deli…
What you will make:
Dukkah with labneh
Muhammara
Yoghurt & onion seed flatbread
Quail with rose & pistachio
Roast cod with sweet leeks, sumac & zhoug
Falafel
Mujadara (Lebanese rice, lentils & onion)
Quince tart tatin, rose water cream

What’s included:
Hands on instruction on how to make the dishes from professional chefs. Small groups (max 10 people), the chance to get stuck in and make your own. It’s all very relaxed and friendly.
All ingredients to create the above dishes. A couple of glasses of wine or soft drinks. A sit down meal where you’ll enjoy your creations and a parcel to take home any extras. We’ll share the recipes with you too.
What do I need to bring?
Please bring your own Tupperware to take home what you’ve made, to save on disposables and help the environment. Also, do bring your own apron (although we have some if you forget!) Just turn up ten minutes beforehand and we’ll let you in. If you arrive late, please call 07785 328991 and we’ll come down and open the door.
