Think about the countries of the Eastern med. and imagine the colours, the ingredients, the flavour combinations! It’s all so delicious. This cookery class is a stunner! You’ll learn to make so many delicious dishes from a classic hummous with spiced lamb to muhammara, aubergine rolls filled with walnuts ricotta and pomegranate – each dish you can replicate at home and have a beautiful meal.
What you will make:
Beetroot borani with raspberries, pomegranate molasses & dill
Hummus with spiced lamb, pine nuts & raisins
Roasted tarator with and almonds and roasted grapes and almond dukkah
Aubergine Moutabel
Muhammara Chopped
Halloumi with tomatoes and honey
Esme Marinated chicken skewers with Tahina dressing
Plum, beetroot in a rose and walnut dressing
Freekah with herbs, green olives, preserved lemons, walnuts
Maftoul salad with roasted peppers, golden raisins cucumber, tomatoes, parsley, mint, za’atar and almonds
Badargani – Aubergine rolls filled with walnuts, ricotta and pomegranates
Heritage carrots with pistachio and coriander salsa verde and yoghurt

Teachers: Kirstie Urquhart is a superb chef who worked for many years with us at Papadeli before setting up as a personal chef. She is wonderfully inventive and knowledgeable and creates absolutely gorgeous food.
Simon MacDonnell aka Papa – even 23 years after we opened Papadeli, he’s still excited about food and cooking! A trained chef and dedicated foodie, Simon will share all he knows after all the years in food!
All chefs are brilliantly knowledgeable and super friendly, so you’ll have a lovely time watching and learning before getting stuck in with some fabulous ingredients. then you get to eat what you’ve made and take lots home to share! Classes are fun and informative and we share the recipes with you to keep and recreate over and over.

The Cookery School
Our cookery school, on the top floor above our deli in Clifton, is a professional kitchen where our chefs create all the delights in the deli and superb food for catering events during the day – from canapés, buffets, takeaway dishes, frozen meals and amazing cakes. In the evening, it’s a beautiful and perfect space for learning how to make all these dishes and taste some new flavours. If you ask nicely, Simon might give you a private tour of the deli…
It really is a unique evening.
What you’ll need
Just you! Bring an apron if you like (we do supply aprons too) and containers to take your food home, to save on disposables. Please arrive 5 or 10 minutes early to 84 Alma Road, BS8 2DJ and we’ll take you upstairs. If you are late, please try to let us know in advance, if not possible, call 07785 328991.
