Passion cake

Recipe from our Bristol Deli

A lovely lady on twitter said she is a little addicted to our passion cake and would we post the recipe – so here it is.  We’d love to know how it goes!


(Makes 2 large round cakes – these are the quantities we use in the bakery!)



800ml veg oil

1000g caster sugar

12 eggs

12 tbsp milk

400g grated carrot

8 mashed bananas

1400g plain flour

4 tsp baking powder

2 tsp ground ginger

2 tsp grpound cinnamon

1 tsp ground all spice

(200g ground walnuts) or extra carrot if nut free



360g soft butter

300g icing sugar 

900g cream cheese

2 tsp vanilla extract


  • Whisk the oil & sugar then add the egg yolks & milk
  • Fold in the carrot & banana
  • Add the spices & baking powder to the flour then fold into the carrot mix
  • In a separate bowl whisk the egg whites until stiff
  • Gently fold in the egg whites until all combined


Pour into lined cake tins and bake on 140* for 60mins (ish)

Allow to cool.  Beat the butter until pale and add the cream cheese.  Combine with the sifted icing sugar and vanilla extract.  Sandwich both cakes together with the frosted cream icing or top two cakes – et voila!
