Lou Meek Hopkins, our fabulous wedding and events manager knows her stuff when it comes to weddings.  She is meticulous, super organised, full of energy and super friendly (even at the most stressful moments!).  The thanks and feedback we get for weddings (thanks to Lou and her team) are always well, just perfect, with lots of gushing and enthusiasm.  What she doesn’t know about weddings is quite honestly, not worth knowing!

We asked her some questions about wedding trends, future predictions and some background on planning for the unpredictable.

What three things make a wedding extra special?

For me, it’s personal touches, great food, and a relaxed atmosphere.

When a couple’s personality is reflected in the details — whether that’s the music, the menu, it feels meaningful rather than formulaic. Amazing food brings people together, and when the logistics are handled smoothly behind the scenes, everyone can actually relax and enjoy the moment.

What’s the most challenging wedding, logistics-wise, you’ve managed?

Outdoor venues or marquees are often the most challenging and the most rewarding. Managing tight timelines, multiple suppliers, and changeable weather — while keeping everything seamless for the couple — takes careful planning and calm problem-solving. The key is anticipating “pinch points” and having contingency plans so the day never feels rushed or stressful for anyone.

What sorts of things can go wrong that you can plan for and try to avoid?

Weather is the obvious one, especially for summer weddings, so having solid wet-weather plans is essential.

Timings can slip if schedules aren’t realistic, and suppliers can occasionally arrive late or misunderstand expectations. Clear communication, detailed schedules, and backup plans make a huge difference — most issues are manageable if you’ve planned ahead -which is something I make sure is done!

What trends did you see last year in weddings?

Seasonal, locally sourced food is a trend that is sticking, as were relaxed, informal dining styles. Couples also wanted their day to feel less traditional and more like a great party with the people they love. Custom cocktails and guests uploading photos on a wedding app instead of disposable cameras,

Flowers were extremely vibrant in 2025, bold and bright, rather than traditional neutral tones

Also a lot more guests started using videography, I think couples want to be able to feel the day again.

What trends do you see showing up in 2026?

I think sustainability will continue to grow, with couples choosing local suppliers, to support their values.

There seems to be a lot more multi-day celebrations including morning brunches and after day events.

What do you love about weddings?

I love being part of such an important day in someone’s life. There’s something incredibly special about seeing months of planning come together and watching couples genuinely enjoy themselves.

What’s your least favourite thing about weddings?

Unrealistic expectations around timing can be challenging — trying to fit too much into one day can add unnecessary pressure. My job is often about gently guiding couples towards choices that will help them enjoy their day rather than rush through it.

How do you build a wedding dream team?

It starts with clear communication and mutual respect. Everyone involved – from the kitchen and FOH – genuinely get on, and it shows in the energy of the day.

clear communication is key, we make sure everyone understands the timings, so there is no confusion or crossed wires.

Weddings can be fast paced and emotional, so our team needs to be able to stay flexible, solution focused and supportive of one another. It feels like a partnership, we all pull together, the day flows beautifully and the couple feels completely looked after.

What’s your favourite wedding menu?

I genuinely do not think I can pick a favourite menu. All our menus are seasonal, generous, and designed to be shared. Food should bring joy but also be comforting — our feasts encourage conversation and connection. At Papadeli, we love menus that showcase fresh, Mediterranean-inspired flavours with a relaxed, abundant feel.
