Emilio-Romagna is a hot house all the classic Italian dishes we all love. Parmeggiano, (some say) the best olive oil, Parma ham, balsamico (this region is where you’ll find Parma, Bologna, Modena to name but a few famous foodie places). Chef and tutor Alexis John has selected a few of her favourites for this brilliant class.

Torta Fritta with Parma ham & Fig
Tortelli with Parmesan, Swiss chard & brown butter
Bollito Misto – Beef, chicken, ham, zampone & cotechino
Salsa rossa, salsa verde, peperonata
Leeks alla parmigana
Dessert Frittelle di mele – apple fritters

What shall I bring?
Nothing – we supply all the ingredients, a glass of wine, apron and a box for you to carry your goodies home!
